Thai Red Curry With Chicken

Ingredients

  1. 1 lbcubed chicken thigh
  2. 2 tbspcooking oil
  3. 4 ozThai red curry paste
  4. 2 canscoconut milk
  5. 2 tbspfish sauce
  6. 1 tbspseasoning sauce
  7. 1 cupThai basil leaves
  8. 2sliced red bell peppers
  9. 6-8Kaffir lime leaves (optional)
  10. 1 cupbamboo shoots (optional)

Cooking Instructions

  1. 1

    Set heat to high and add cooking oil and red curry paste. Sauté for one minute.

    Add half of the coconut milk and stir until combined.

  3. 3

    Add Kaffir lime leaves, fish sauce, seasoning sauce, and remaining coconut milk.

    Add chicken and red peppers and cook until meat is cooked and tender.

    Add bamboo shoots and Thai basil. Bring to boil and then turn stove off.

    Turn off heat and serve over jasmine rice. Enjoy!
