Ingredients

2-3/4 hours
6 servings
  1. 4 poundpork shoulder roast
  2. 1-1/4 cupgreen olives stuffed with pimentos
  3. 1-1/4 poundcarrots split
  4. 1-1/2 poundpotatoes, 3 large ones rough cut
  5. 3 tablespoonseasoned salt
  6. 1-1/2 teaspoonsmoked paprika
  7. 1-1/2 teaspoongranulated garlic powder
  8. 2 stalkscelery washed and chopped
  9. 1-1/4 cuporange juice with pulp
  10. 1/2 cupwater

Cooking Instructions

    Preheat oven 400 degrees Fahrenheit

  2. 2

    Cut slits into roast. Split the carrots to fit the slits. Poke the carrots and olives into the slits. Cut carrots off even with surface of the surface of pork.

    Add salt, garlic and rest of the olives, potatoes, and carrots.

    Add the chopped celery and paprika.

  5. 5

    Add orange juice.

  6. 6

    Roast in oven covered for 1-1/2 hours then add water

  7. 7

    Roast for one more hour. Let rest 10 minutes.

    Slice and serve
