Slow cooked mutton curry

This is another one of my slow cooker favourites. I think it works best with mutton. This meat has a strong flavour that holds its own with a spicy sauce and it really benefits from a long slow cooking.
My butcher gets leg of New Zealand mutton which is what I used here.
If you can't get that use shin of beef instead.
Don't use lamb!
It wont taste right and it will turn to mush.
I have also included a couple of tips to speed up using fresh garlic and ginger.
Hope you like it.
This recipe uses Patak's Balti paste. You can use whatever spice paste you want instead but make sure its from Patak's. I have tried others but they simply are not as nice.

Steps

  1. 1

Dice the meat and brown well in a big pot

  2. 2

Here's a quick way to peel garlic. Squash a clove of garlic under a broad blade knife by whacking it. Like this

  3. 3

The skin just falls off the squashed garlic and can be separated in seconds

  4. 4

Do this with all 3 cloves and put to one side.

  5. 5

Grate the ginger on a fine grater. Don't peel it. There's lots of flavour in the skin and it saves time too

  6. 6

Chop the onions and chilli too.

  7. 7

Put all the chopped stuff in the pan with the meat. Then add the tomatoes, tom puree and spicy paste. You might need to add a bit more water here. Bring to the boil and add to the slow cooker.

  8. 8

You now just put the lid on and go away. I cooked this from about 10:00 am to 16:00 on a low setting and it was perfect.

  9. 9

We did 20 miles on our bikes and visited the Bristol Bike Ride while it was cooking.

Serve with "Rice and Peas" and home made flatbread. See my other recipes for how to make them too.

I love to cook. I have been cooking since I can remember and like to create dishes that are just a bit different.I am also a bit of a cheat. I like authentic flavours but if I am cooking for a dinner party I want to spend time with my guests rather than slaving away in the kitchen while they are drinking wine at the table.I like to think that my recipes are quick and relatively easy.I try to keep fat and salt to a minimum and use Olive or Rapeseed oil as somebody told me that it was healthy.I almost never cook with salt. My blood pressure is borderline and I am told that too much salt isn't good for you.Sugar is my biggest wind up! I like sugar in sweet things like cake and ice cream but why do they have to put it in Gravy?I check the ingredients of everything I buy and if a savoury product lists sugar on the ingredients then it goes back on the shelf.
