Cucumber and Seaweed Salad

I made this easy refreshing salad again and again during summer. Even in autumn my husband asks me to make it. It's good just as it is, but I like to add the flavour of freshly ground sesame seeds. I hope you enjoy it.

Ingredients

6 servings
  1. 2large cucumbers, thinly sliced
  2. 2 Tbscut dried sea weeds
  3. 1/4cup(60ml) vinegar
  4. 1/4cup(60ml) soy sauce(I used less sodium)
  5. Drizzled sesame seed oil
  6. 1 TbspToasted sesame seeds (optional)

Cooking Instructions

    Soak the sea weeds in the water as directed, then drain the water well.

    Peel and slice the cucumbers very thinly.

  3. 3

    Add the sea weeds.

    Add vinegar and soy sauce, combine well, sit in refrigerator for 1 hour.

  5. 5

    Ground toasted sesame seeds and sprinkle over the salad if desired. Enjoy fresh sesame flavour!
