Shirred Eggs with Bacon and Cheese

Ingredients

  1. 2 largeeggs
  2. 2 tbspheavy cream
  3. 1/4 tsppepper and salt to taste
  4. 1 tbspshredded cheese, I used extra sharp cheddar
  5. 1 tspchopped fresh chives
  6. 1butter for pan, softened
  7. 2crispy cooked slices of bacon cut into strips

Cooking Instructions

    Brush 6 ounce r amekins or oven safe dish with softened butter

    Preheat oven to 375

  3. 3

    Crack eggs into a seperate small cup and pour carefully into prepared buttered dish, so that eggs sit side by side. Sprinkle with salt and pepper. Place dish on. a baking sheet

    Bake 10. minutes until just beginning tro set and is turning opaque.

    Remove from the oven and top with cream, cheese and chives. Return to oven and cook until eggs are just set ut yolks soft. About 10 minutes.

    Garnish with bacon strips

    Serve immediately as eggs will continue to cook while sitting.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
