Cooking Instructions
- 1
Heat pan or dutch oven to med to med high with oil. Chop onion, garlic and kielbasa. Add to the pan while oil is heating other wise chop ingredients ahead of time and wait for the oil to get hot. Add all to the hot pan. Saute about 10 - 15 min.
- 2
Add chicken broth and red beans (with its juice) and seasoning, stir well.
- 3
Cook until boiling then bring boil to med high for 45 min. Depending on how long your rice cooker takes, get that going too.
- 4
Allow the red beans to "marry" in the pan. The longer you cook, the thicker the sauce gets.
- 5
* If you don't have 3 cans of red beans, one of those cans can be black beans.
- 6
*Add green pepper or jalepenos or even chopped up carrots to step 1. Imagination is key, flavor and nutrition is number one. Just do it, get creative.

This was an accidental recipe that I have made now several times and each time I find it amazing! I prefer my red beans spicy and use more Cajun spice than some care for. Season it according to taste and I hope you enjoy it as much as I do!maddog08

I had a bag of dry beans from the panic buying spree when the pandemic lockdowns began, but I never figured out what to do with them before now. I managed to score some Andouille sausage somewhere and found this recipe that seems like it would work with what I got. 🇺🇲 #cajun 蛟龍Stormwyrm -

Monday Red Beans and Rice Monday Red Beans and Rice
In the New Orleans area, Red Beans and Rice is a tradition on Mondays. In times past, leftover meats from Sunday became part of the recipe for Red Beans and Rice. Since there are no leftovers in my house, I have come to rely on Andouille sausage and ham chunks for the meat ingredients. I take short cuts because traditional southern recipes can be an all day long affair for which I do not have time. alley927cat -

Cajun style red beans and rice Cajun style red beans and rice
This is my husband's creation, he's made it for years. Now that I do all the cooking, I make it. I realize it's not an original recipe, only a twist on something pre-made, but it is still delicious either way! *For a non-spicy version use the Kielbasa and no Cajun seasoning, for a little bit of spice use the Andoullie. Also tastes great with chicken. theonlygirl013
