Chilli recipies are a dangerous game - everyone has their own favourites. In fact, I have a cookbook that contains nothing but chilli recipies, all claiming to be the best! But, anyway, this is the best! (at least in my view). I hope that someone else likes it too!

Ingredients

  1. 500 gramsMinced Beef
  2. 1Onion
  3. 1Red Pepper
  4. 400 gramsChopped Tomatoes
  5. 1Beef Stock Cube
  6. 175 mlRed Wine
  7. 400 gramsKidney Beans
  8. 1 tspGround Cumin
  9. 1 tspGround Coriander
  10. 2 tspSmoked Paprika (or chipotle flakes)
  11. 2 tbspChopped Garlic
  12. 1 tbspTomato Puree
  13. 1Fresh Chilli (or up to 4 if you like it hot!)

Cooking Instructions

    Brown the mince in a little oil. Once brown, add the wine and allow the alcohol to bubble off (should take about 2 minutes). Now add everything except the kidney beans.

    Stir, cover and leave on a low heat for as long as your patience allows, but at least 30 minutes. I tend to give it a couple of hours. Stir occasionally.

    Stir in the kidney beans and cook for a further 15 minutes.

    Serve and enjoy! I generally serve it with rice.
