Tex's Pan-Fried Corned Beef Reuben 🐮🍞

Ingredients

1 serving
  1. 2 slicerye bread
  2. 135 gramscorned beef (sliced)
  3. sauerkraut
  4. Russian dressing, Thousand Island, or horseradish
  5. 2 slicecheese (preferably Swiss)
  6. 1 tbspgroundnut, rapeseed, or vegetable oil
  7. salt & pepper to season

Cooking Instructions

    Add the oil to the pan and swirl until it coats the entire bottom of the skillet. Bring to a high heat and toast one side of each slice of bread

    Remove the bread from the pan, reduce heat to low and cook the corned beef and sauerkraut for 2-3 minutes

    Pile the corned beef one the toasted side of one slice of bread, and return to the pan un-toasted side down. Increase the heat to medium

    Add the sauerkraut on top of the corned beef, then drizzle with mustard or ketchup

    Add the cheese

    Then add the lid, un-toasted side to the outside again, then flip with a turner/spatula

  7. 7

    Toast for about 3-4 minutes. Slice and serve

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
