When you have a vegetable hater this can have them eating their veggies and love it!
Cooking Instructions

In large stock pot add veggies. It's important to cut vegetables even in size when preparing and sweet potatoes smaller than russets as they take longer to become tender.

Add enough vegetable stock to cover veggies. Will take several cups.

Bring to boil over medium - high heat, then reduce to simmer.

Simmer until veggies are tender about 15-20 minutes.

Drain, add butter to pot and place veggies back in.

Add salt and pepper and start mashing, with hand masher or with beater but make sure not to use beaters in non stick pots.

Add enough warmed half and half until you reach desired consistency. Adding a little at a time.

Serve hot!

I met up with a friend in Kefalonia, and she asked me if I had a recipe for Moussaka with vegetables, it just so happens that I did, and to be honest I had never made this version. Last Sunday I took out my pots and pans and started working on it, and the end result was fabulous!!! It took me a bit longer to make than the usual time because there is a bit more work to be done. My relationship with rutabaga is absolutely terrible and hostile. Either I haven’t cracked the code yet or it might just have to fall under ‘may try’.I’ve tried substituting rutabaga for potatoes in a mash - It turned out pretty descent with all the butter and seasoning but was honestly too much effort in my opinion. However, a combination of rutabaga and other vegetables in a purée is a solid fallback plan that I won’t even try to gate keep. It could simply be rutabaga and carrot purée or you could experiment with all of your favorite vegetables.
