This is a great alternative to traditional carbonara with spaghetti noodles! I also added spinach, onions, julienne carrots, julienne broccoli stalk, and mushrooms to mine. Feel free to make it your own and add whatever veggies you desire.

Ingredients

  1. 1Spaghetti Squash
  2. 2 largeeggs
  3. 3/4 cupgrated parmesan cheese
  4. 4 slicebacon
  5. 4 clovegarlic, minced
  6. salt and pepper
  7. olive oil, extra virgin

Cooking Instructions

    Halve and roast spaghetti squash with small drizzle of olive oil for 15 minutes, then shred it into 'noodles.'

    Dice bacon and saute until fully cooked.

  3. 3

    While bacon cooks, whisk eggs and parmesan cheese together until well mixed.

  4. 4

    Add minced garlic to the bacon and continue cooking about 1 minute. (At this time you may add any other vegetables you would like and saute)

  5. 5

    Stir squash and parmesan/egg mixture, then add to the pan with bacon and veggies. Stir well, then serve!
