Caramelized Onion And Bacon Dip

I like this dip as you can customize it very easily to your dietary need and flavor preferences. Using a soy mayo keeps it dairy free. I give three choices for herbs all offering you flexibility in flavor profiles. Serve this with veggies, bread or soft pretzels. I use the red onion for its sweetness. You may use any onion you prefer. Very versatile!

Ingredients

  1. dip
  2. 8 slicebacon
  3. 1 1/4 cupdiced red onion
  4. 2 cupwhite beans
  5. 1/3 cupsour cream or soy mayonnaise
  6. 1/2 tspsalt
  7. 1/4 tspwhite pepper
  8. 1/4 tspcayenne pepper
  9. 1/4 cupfresh chopped chives , you may also use fresh italian parsley or cilantro

Cooking Instructions

    Cook bacon in large pan until crisp. Remove and drain on paper toweling. Reserve one slice for garnish.

    Remove bacon drippings from pan but reserve two tablespoons worth to cook onions in.

    Cook onions in reserved fat, over low-medium heat for 10-15 minutes. They should caramelize and be brown in color. Set these aside too.

    Add beans to pan and heat through for a minute or two.

    In a food processor, add in beans, sour cream, seasonings. Pulse until smooth.

    In a serving bowl, add in bean mixture, onions, herbs and 7 slices of the bacon. Crumble bacon before adding. Mix well and serve. Crumble remaining bacon slice on top to garnish.

    I like this served warm. If you refrigerate for several hours the flavors will develop more. I still just serve warm.

Really easy to make and really easy to eat. Finished half a bag of chips just wanting to eat more dip!
