Ingredients

  1. EGG SALAD
  2. 6 largehard boiled eggs, peeled
  3. 2 tbspcelery, finely minced
  4. 1 tbspfresh chives, chopped
  5. 1 tbspfresh parsley, chopped
  6. 1 tspfresh lemon juice
  7. 1/2 tspdijon mustard
  8. 3 tbspor more of my Spicy Ranch Dressing, recipe attached in direction step #1
  9. 6 sliceof bacon, cooked crispy
  10. 6 largesturdy romaine, cos or iceberg lettece leaf cups
  11. GARNISH
  12. sliced grape or cherry tomatos
  13. thin sliced pickles, sweet and / or sour
  14. thin slicedcradishes

Cooking Instructions

    Chop eggs into a bowl add remaining egg salad ingredients except bacon and lettece leaves and mix well

    Fill each lettece leaf with equal amounts of egg salad, crumble baon eveny over egg salad. Serve with the garnishes of tomatoes, pickles and radishes to sprinkle on if desired

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
