By the end of the summer I usually end up with more baby tomatoes than I can manage to eat so this preserve brings a bit of the garden flavour for the long winter evenings.

Cooking Instructions

Blanch tomatoes in boiling water to skin them

Put ina bowl cover with the sugar and stand overnight
- 3
Drain juice into a pan and boil to a heavy syrup
- 4
Add tomatoes rind and juice of the lemon and the spice of your choice. And cook until quite thick

Pot it on screw top jars
