Bacon, Barbecue and Cheese Smothered Leftover Meatloaf

I made and cooked two meatloaves so I could freeze one for a later dinner. After I defrosted it , I decided to serve it in a new way and what doesn't taste great with bacon, cheese and barbecue sauce? We rarely have "leftover" meatloaf but I think I'll make two from now on! Maybe next time I'll use sauce, pepperoni and mozzarella. Yum!!

Ingredients

  1. 5or 6 slices leftover meatloaf(or whatever you have, just adjust topping amounts)
  2. 2 cupshredded cheddar
  3. 1 cupbarbecue sauce
  4. 10-12 slices cooked and crumbled bacon (roughly two pieces per meatloaf slice)

Cooking Instructions

    Preheat oven to 350 . Line cookie sheet with foil and coat with cooking spray. Add leftover meatloaf. Generously coat each slice with barbecue sauce.

    Next crumble bacon on each slice. Bacon is awesome so feel free to add more than I did. Bake in oven for 15 min or so. Meatloaf should be warmed through.

    Add cheddar cheese evenly and cook an additional few minutes until cheese is melted. Done!!
