I love French Onion soup but with all that bread and cheese it's a treat. This is my low carb, lower calorie version for everyday

Ingredients

45 mins
8 servings
  1. 6sprays of 1 cal oil
  2. 1 kgsliced onions
  3. 2 clovefinely chopped garlic
  4. 2000 mlgluten-free chicken stock, see my profile for a recipe
  5. 1 tbspworcestershire sauce, see my profile for a gf recipe
  6. 1salt & pepper to taste

Cooking Instructions

    Spray the oil in a large, heavy bottomed pan and start to heat it

  2. 2

    Put the sliced onions and garlic in the pan. I like to use a mixture of different onions. Add a pinch of salt and pepper

  3. 3

    Fry them on a high heat until nicely coloured, stirring frequently

  4. 4

    Turn the heat to low and let them sweat uncovered for 10 minutes

  5. 5

    Turn the heat back on high and pour a few ladles of hot chicken stock into the pan to deglaze it. Stir the onions around to get all the flavour off the bottom of the pan

    Pour in the rest of the stock and bring to a slow boil

  7. 7

    Let simmer for 15 minutes then add the worcestershire sauce to taste

  8. 8

    This is a slim version of my previously posted French Onion which was loaded with bread & cheese, yum lol!
