I just love my Mom's Potatoe Soup but I added the Sausage & carrots & thickened it up a bit! When I cook I rarely measure so hopefully if you make this you can tweek it to your liking! It's so filling & great with corn muffins on a cold evening!

Ingredients

  1. 1 packagesSmoked sausage or similar sausage
  2. 1 mediumonion, chopped
  3. 3/4 cupcelery, chopped
  4. 7 large potatoes, peeled, washed & cubed.
  5. 2carrots, cleaned & sliced into bite size pieces
  6. 1 1/2 cupmilk
  7. 1 cupchicken broth or stock
  8. 1 stickbutter or margarine
  9. garlic powder
  10. italian seasonings
  11. salt & pepper
  12. instant potatoe flakes for thickening

Cooking Instructions

    Place peeled cubed potatoes & carrots into a 5 quart pot & cover with water.

    Bring to a boil & cook until potatoes are fork tender. Carrots will be slightly hard but will continue to cook.

    Cut sausage into bite size chunks.While potatoes cook, brown together in a frying pan sausage, onions & celery & garlic powder until tender.

    When potatoes are tender drain off approximately half the water. Add the stick of butter, let it melt some. Then add milk & broth& stir. Add sausage & onion mixture & seasonings.

    Add the instant potato flakes as needed for desired thickness. I use these because it easy. Alternative: (A person could add cornstarch if it is first stirred up in cold water. 1 or 2 Tablespoons to a half cup of cold water. Stir until smooth & add to soup. Repeat as needed for thickness)

    Simmer until carrots are desired tenderness & serve!

I enjoy watching cooking shows & I am most creative after watching several chopped episodes! I live in a country town & it's a ways to a good grocery store so I have to be creative with what I have available or go 25 miles to Kroger! My hubby & son are big eaters & very different at that. I try to please both with a little country cooking but also changing it up sometimes with different cuisines! My love of cooking was nurtured by my Dad who coaxed me into tasting all kinds of different foods growing up. Both my sons love trying new recipes. My youngest son is now taking Culinary in Vocational school! Guess it runs in the family!
