I woke up January 1st, 2015- and decided to make something I'd never made before. I didn't think it would work with all the spinach but it came out perfect. The vegetables make it taste so fresh and delicious! I really love this quiche recipe because there is no milk or cream. Hope you like it!

Ingredients

  1. 1frozen pie shell (thawed)
  2. 4eggs
  3. 1 1/2 cupfresh baby spinach
  4. 1/2 cuproughly chopped fresh mushrooms
  5. 2 cloveminced garlic
  6. 3 tbspchopped purple onion
  7. 15grape tomatoes halved
  8. 1/2 tbspsalt (I use Celtic gray salt)
  9. 1/2 tspblack pepper
  10. 3/4 cupfeta crumbles
  11. 1/2 tspbaking powder

Cooking Instructions

    Take pie shell out to thaw and preheat your oven to 350°.

    Beat 4 eggs in a bowl then add the salt, pepper, and baking powder.

    Add all the other ingredients and mix until the spinach has wilted a little.

    Pour egg mixture into your pie crust and bake for about 50 minutes. Let set for at least 30-45 minutes. Enjoy!
