Ingredients

1hour
  1. 2Tubers of yam
  2. Salt and oil for the yam
  3. For the sauce
  4. Halfa kilo of fresh Tomato
  5. 2 TBSPWhite vinegar
  6. 6 Tbspsugar
  7. 1 TBSPWhite pepper
  8. 1 tspBaking powder
  9. 4 TbspGroundnut oil
  10. Parsley for garnish

Cooking Instructions

    Peel yam, cut into large batones and allow to sit in cold water for 30minutes. Drain and dry with cooking towel.

    Heat oil and fry for 10 minutes. Drain and Sprinkle salt. Repeat same for other batches. Note. Never crowd the pan

  3. 3

    Wash and cut Tomato. Blend Tomato. Heat sauce pan. Add oil add sugar, then add your blended Tomato. Allow to cook for ten minutes. Add white pepper, and white vinegar. Allow to cook until sauce thickens. Check taste. Take off heat and serve. Garnish with parsley.
