Ingredients

  1. 3 tbspOil
  2. 2 cupFrozen diced hash browns
  3. 1/2 cupDiced peppers and onions (frozen or fresh)
  4. 1 cupLeftover roast beef, diced
  5. 1as needed Salt & pepper
  6. 1as needed Other spices to your liking: I used smoked garlic and red pepper flakes

Cooking Instructions

  1. 1

    Heat oil in a large skillet over medium heat. Add potatoes, pepper, & onions. Let cook untouched for about 5 minutes.

    Add roast beef. Stir and let cook another 5-10 minutes. Flipping over gently once or twice for even browning.

  3. 3

    Serve with eggs fixed your way.
