I like lasagna add much as the next guy, but not the edges, or the calories, or the time and effort it takes to make. I've made a lasagna with zucchini noodles that was amazing, so I decided to try something else new and make it with spinach. Turned out even better than expected!

I like lasagna add much as the next guy, but not the edges, or the calories, or the time and effort it takes to make. I've made a lasagna with zucchini noodles that was amazing, so I decided to try something else new and make it with spinach. Turned out even better than expected!

Ingredients

  1. 9lasagna noodles
  2. 1 boxfrozen spinach
  3. 3 tbspricotta cheese
  4. shredded cheese
  5. 1 canpasta sauce (I used prego spinach florentine)

Cooking Instructions

    Boil lasagna noodles and spinach in seperate pots until spinach is thawed and noodles are soft

  2. 2

    Drain noodles and rinse with cold water. Drain spinach and squeeze excess water out

  3. 3

    Mix spinach with ricotta cheese. Lay out a noodle and spoon 1 regular spoon worth into the noodle. Thin it out and cover the full noodle.

    Roll up and repeat until all noodles are filled and all spinach is used (a little extra spinach is ok)

    Top with sauce and cheese

  6. 6

    Bake at 350 for 20 mins
