Fuhgitaboudit Spaghetti Sauce
I wanted to make a good, homemade spaghetti sauce, but it's the middle of summer and I definitely didn't want to warm up my house any more than I had to. What ensued was my endeavors to make a good, hearty spaghetti sauce in my slow cooker. The result is this easy and delicious sauce you can cook all day without heating up your kitchen. You will use your stove minimally to prep your tomato paste infused veggies, but after that just throw it all in the crock pot and "fuhgitaboudit".

Kids' Favorite, Braised Chinese Cabbage in Cream Sauce
I wanted my husband and kids to eat a lot of Chinese cabbage, so I came up with this flavour which is easy to eat It's easy but nutritious and you can get calcium from it You can drink up the soup which contains all the nutrition from the Chinese cabbage.1) You can just chop it. 2) Before adding the mixture, mix well, then swirl it in. 3) Once you add the mixture, mix the sauce quickly. 4) Using rice flour instead of flour prevents the sauce from getting lumpy, so I recommend it. 5) If you make the sauce thick, and add broccoli and carrot, it becomes a stew. 6) Since this recipe doesn't require water, it tastes delicious. Arrabiata Meat Sauce
Our first big "adult" purchase was our giant shiny 8-quart Calphalon stock pot, used almost exclusively for this sauce :)
This is a family recipe for arrabiata sauce passed down by the Polish women in my family for at least three generations now. (How a spicy Italian meat sauce became the star dish of a Polish cook, I have no idea.)
Great meat sauce starts with great meat. We've found the key is to buy from a specialized butcher. If you have an Italian butcher, even better. It's more expensive, but worth every penny. We get ours out at Springfield Butcher in Springfield, Virginia. Even higher end grocery stores, like Wegmans or Whole Foods, simply can't cut it when the flavor of the meat is this important.
The only other ingredient I am super picky about is the brand of crushed tomatoes we use. Cento (the bright yellow can) is the ONLY brand we have ever found that uses nothing but tomatoes. No citric acid, no salt, no nothing but tomatoes. We've made it before with other brands, and it is not the same. This is the recipe as it now stands. My mother made changes to it over the years, and we made ours. We like things SPICY so we use all hot Italian sausage, but you can dial back the spice by using half hot and half sweet.
This recipe makes a LOT of sauce - you'll need an 8-quart stock pot if making on the stovetop, or else a large crockpot. Leftovers can be easily frozen in small 1-quart Tupperwares for easy meals. We usually get least 6 meals out of this recipe.

Grandma's spaghetti sauce
My grandma use to make this sauce all the time and freeze the left over for quick easy meals during the week. Sometimes I get crazy and add black olives, green pepper, red pepper and sun dried tomatoes for a chunky sauce.

Plain Tomato Sauce
I asked my mother-in-law for her tomato sauce recipe only to find out that she doesn't really have one. I watched her make the sauce and saw that she doesn't use meauring cups or spoons. So I made notes as best I could, but it never tastes quite the same. My husband likes the sauce, so I guess it gets a pass! You can also make meat sauce by adding 0.5 kg cooked lean ground beef.

Cook time about two and a half hours. You can speed up cook time by cooking the mushrooms and onions in a pan prior to putting them in the sauce. This sauce is not a sweet sauce. I make alot so i can freeze the rest being a basball mom i need stuff to just thaw and heat up. Even better the second day.
