It was Christmas season and also the time for my family five-annual house renovation. We were all exhausted and famished. Thought of something fast to prepare for breakfast and decided to give my pancake a twist by giving it an orange flavor and also pairing it up with plantain and veggies. I'm not good with measuring but it comes out nice.

Thought of something fast to prepare for breakfast and decided to give my pancake a twist by giving it an orange flavor and also pairing it up with plantain and veggies. I'm not good with measuring but it comes out nice.
Cooking Instructions

In a dry bowl mix together flour, sugar, baking soda. A pinch of salt. In another bowl mix together milk, orange juice, zest, egg.

Add the mixture together with the dry ingredients and stir together till there's no lump.

Heat up the pan with a little oil and pour a spoon of the mixture into it. Fry on both sides till you're done with the mixture.

Add a little salt (and pepper depending on your preference) to the diced plantain and fry in hot oil.

In a separate bowl mix the onion, carrot tomatoes and lettuce together. The red beans should be put it last so it doesn't break.

You can dress the veggies with mayonnaise or vinegar depending on what you like. The crepes can also be served with chocolate or honey syrup.
