Ingredients

  1. 2 cupsugar
  2. 1 1/2 cupoil
  3. 4eggs
  4. 2 1/4 cupflour
  5. 2 tspsalt
  6. 2 tspbaking soda
  7. 2 1/2 tspcinnamon
  8. 3 cupfinely grated carrots

Cooking Instructions

    Preheat oven to 300°F

    Grease and flour two 9 inch round cake pans

  3. 3

    Combine sugar, oil and eggs in stand mixer. Mix at medium speed for 2 minutes

  4. 4

    Add dry ingredients, mix at low speed for 1 minute

  5. 5

    Add carrots, mix until incorporated, about 1 minute

  6. 6

    Divide batter evenly between the 2 cake pans. Use spatula to move batter from center of pans to the edges

  7. 7

    Bake for 1 hour or until toothpick inserted in center comes out clean

  8. 8

    Cool on rack for 1 hour, then frost with Duncan Hines cream cheese frosting
