Cooking Instructions

Sieve flour into a bowl and add salt.

Make a well in the centre of the flour and add the melted butter.

Break in the eggs and add 1/3 of the milk.

Beat well gradually adding the rest of the milk and drawing in the flour to make a smooth batter.

Pour the batter into a jug or long container.

Beat mixture if lumps remain until mixture is nice and smooth.

Put in fridge and allow to stand for approx. 1hr ( this adds to the mixtures consistency and texture )

Prepare pan for the batter with a small knob of butter and heat until very hot. Test by adding a small bit of the mixture with a teaspoon. Mixture should form almost immediately.

Pour mixture until pan is covered. Fry until you can no longer see the wet mixture on the surface.

Turn over and repeat. This side should only take about 1 or 2mins.

Remove from pan onto a large plate and add a sprinkle of caster sugar, some golden syrup and a squeeze of jiff lemon.

Roll pancake.

Repeat above steps until all mixture is used or leave to be used following day.
