Cooking Instructions

Preheat oven to 180°C.

Sift flour, baking soda, salt into a bowl. Mix in sugar.

In another bowl beat eggs. Stir in milk, butter and banana.

Mix quickly into dry ingredients, stirring until ingredients are just combined.

Spoon into a greased and lined loaf tin. Bake for 45-55 minutes. Leave in tin for 10 minutes before turning out onto a cooling rack.

Now that I'm older, I've found myself frequenting coffee shops in the morning, searching for the sweet smell of fresh baked banana bread. On most day, a slice is not difficult to find, but every once in a while, my go to spot sells out before I can reach it. For those days, I've started baking my own.Banana bread is very simple to make, and this recipe is very straightforward, though I've added my own twist by baking the bananas with sugar first to add a little caramelization and bring out the banana's aroma.Hope you enjoy!

I usually double this recipe, making 1 loaf and 1 batch of muffins. The recipe is very versatile. You can add more banana if you'd like to increase the banana flavor. I have also made it with add-ins (choc. chips, dried cranberries, chopped walnuts). Stir in after flour.
