Ingredients

  1. 1 cupspinach
  2. 1/2 cupkale
  3. 1/4 cupavocado
  4. 1/4 cupgreen onion
  5. 1/4 cupcherry tomatoes
  6. tofu seasoning
  7. 1 tspfresh thyme
  8. 1/2 tbspcumin
  9. 1/2 tbsponion powder
  10. 1/2 tbspminced garlic
  11. 1 cupwater
  12. 2 tbspolive oil
  13. 1 cupfirm tofu
  14. 1 tbspnutritional yeast

Cooking Instructions

    Heat olive oil in medium saucepan. Add spinach and kale, sautee for up to 3 minutes.

    Combine tofu seasoning ingredients.

    Add tomato, avocado, green onion to pan.

  4. 4

    Crumble tofu into bit size pieces and mix with seasoning. Add to pan. Stir and cook until one side of tofu is browned.

    Add extra veggies and adjust seasonings ad desired!
