Aubergine and Snail Sauce paired with Boiled Yam

I have always wanted to try out sauces with any vegetable from the eggplant family. I have tried out the local green garden egg variety but was curious to see if the other varieties would offer anything different. Did it? Try it out yourself to determine ;-)

Cooking Instructions

Put sliced yams in a pot of water on heat to cook. Parboil snails for 8minutes. Chop up tomatoes, peppers, onions and garlic. In a small pot, add a cooking spoon of vegetable oil. Lightly fry onions and garlic till translucent then add in chopped tomatoes and peppers. Season with salt and bullion cubes to taste. Fry till oil starts showing, turn down heat and add snails. cook for 10 minutes then add chopped aubergine, Cook for another 10 minutes on low heat.

Serve sauce with boiled yam. Enjoy!

This is a sweet yet spicy tomato sauce that I like to add to my chilli. You could put it on anything you wanted too really but it's a really good fit when mixed into a chilli I think. If you don't want the sweetness to it simply substitute the 9 roma tomatoes with 4 beefsteak tomatoes and leave out the brown sugar entirely. When prepping the peppers don't include the bell peppers' seeds into the mixture however, do include the habanero seeds. Ticsen Vorel -
