Stuffed Tri-Tip wrapped in Bacon

Now I'm sure that I've forgotten a few minor things, but I wrote this as more of a guide then a strict recipe. All of the major steps are there.

Anyways, a bit of background. I've been using this recipe since I was sixteen, sometimes I'll dry rub it and sometimes I use a oight marinade on the meat beforehand. it really depends on what is in our cabinets at the time. For the last few years this recipe has won my neighborhood's 4th of july bbq contest.

So I hope you enjoy this recipe as much as my family and I have for the last few years.

Ingredients

  1. Meat
  2. 1 largeTri Tip
  3. 1 packages12oz Bacon
  4. Stuff That you put inside
  5. 4 ozCream cheese
  6. 2 largeJalapenos
  7. (Completely) Optional seasonings
  8. 1/2 ozGround black pepper
  9. 1/2 ozPappy's Seasoned Salt
  10. 1/2 ozcrushed red pepper flakes

Cooking Instructions

    SIice Jalapenos into quarters, Then dice them.

    Season meat to taste . if unsure, use the optional spices listed.

    Cut the Tri Tip Horizontally (almost like a book), Leaving About an inch of spine.

    With your fingers spread the Cream Cheese evenly inside .

    Liberally sprinkle Jalapeno pieces inside,The remainder can be chucked or placed on top.

    Close Tri - tip, pressing the edges together firmly with your fingers.

    With the fat side of the tri tip up, drape the bacon over it making sure to tuck the loose ends under.

    setup your grill for indirect heat, or if you have a smokebox use that. ideally you want this to cook at about 225-250 degrees for four to six hours. Turning 1/4 turn every forty five minutes.

    For the last hour or two, wrapping it in foil and sticking it in the oven is perfectly accptable.

    Alternatively, if you've a large enough crock pot put in on low for 8 hours.

    Let sit for 5 to ten minutes before you cut and enjoy.
