Ingredients

  1. 1 cupSelf Rising Flour
  2. 1/2 tspBaking Soda
  3. 1/4 cupSugar
  4. 1/2 tspSalt
  5. 1Egg
  6. 1/4 cupOil + 2 tablespoons
  7. 1/2 cupMilk (any type of unsweetened)
  8. 1 cupCorn Meal (I like Hot Rize)

Cooking Instructions

    If you don't like the grainy texture of most corn bread, make the batter the night before. It will soften the grains up.

    Put 2 tablespoons of oil in your baking pan or skillet. Place it in the oven. Preheat oven to 425°F. A hot pan will insure crispy crust on the corn bread.

    Mix dry ingredients. Then add remaining wet. You want a pudding type consistency. If yours is too thick add a little milk. If it's too thin add a little flour or corn meal. If you are adding add ins now's the time.

    Bake until golden brown on top and a fork can be inserted and come out clean.

    Run a butter knife around the edges of the pan. Careful not to cut into your corn bread.Place a plate or sheet pan larger than the baking pan over it. Flip your corn bread out to keep that crispy crust.

    Serve with hot with butter.

    ****Add in ideas. While mixing add 1/2 cup of corn, onions, peppers, cheese, bacon, cracklings, etc. I made it with leftover turkey sausage before. It was fabulous. Anything you think would be good! That's the cool thing about cooking you can let your personality shine. Make it your on!
