I don't like boiling eggs so figure'd i would scramble them instead.
Cooking Instructions

Set stove top to Medium-High and melt Butter in a Small to Medium frying pan.

Scramble the eggs until cooked and put the eggs in a small mixing bowl.

Add Mayonnaise, Mustard, and Relish or Jalapeno's to taste. Stir ingredients until good and mixed.

Scoop a heaping spoon full of the mix on some bread and enjoy.

I make this with all the children's hard boiled eggs from the Easter Holiday every year and also sometimes in between when we are just craving it! I am a fan of miracle whip's flavor however, I will use mayonnaise if that's what I have. I also normally use celery seed as I enjoy the flavor of that as well. However, I've been out of that spice lately so I decided to substitute chia seeds and it worked just fine! You can also substitute any onions you have for the green ones. This is great on bread, in wraps, & even on crackers! (*Note: this recipe is written with eggs already hard boiled, if you need to boil them first, you will need to add 10-15 mins to your cook time.)
