Quick, easy, healthy & good on just about everything.
Cooking Instructions

In a large, hot, dry pan char garlic cloves, peppers & tomatoes. Cover to steam soften. Let skins get a little blackened.

While those are cooking add to your blender the onions, cilantro, lime juice. Reserve a little bit of the green parts of the scallions.

Add some salt and blend. Add the rest of the veggies and pulse to desired consistency.

Taste to adjust seasoning and add vinegar if desired. I like just a few drops of rice vinegar.

Quick Salsa
I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. If you only have tomatoes and onions, that would work, too.
