Tex's Mushy Peas 🇬🇧🍲

Tex @cook_3903024
These are the only vegetables served in most British chippies, fortunately they go great with everything most chippies sell.
Cooking Instructions
- 1
Drain the peas (keep the liquid), and tip into a saucepan on a low heat
- 2
Add the butter, and break up the peas with a fork. Don't mash, just crush a little. Cook in the butter for about 1½ to 2 minutes.
- 3
Stir in the vinegar and salt and cook the peas for about 3-4 minutes until they soften. Stir frequently, and crush a little more with your fork. Add a little more butter if necessary, and season with a little more salt & vinegar according to taste. Add a little hot water or the strained juice from the peas if too dry
- 4
Serve. Enjoy!

Tex's Proper Beer-Battered Fish & Chips with Mushy Peas 🐠🍟
Fish and potatoes were two of the few items that weren't rationed during WWII, and rationing didn't end in Britain until the mid-1950s. Consequently, fish and chips, which before the war had been seen as just a working-class food, made its way upscale to become a food that all Britons ate. Your local chippy could also sell you meat pies, as they were not rationed either, though the meat in them was more likely to be Spam than anything else.

Mushy Peas with Toast
Mushy peas are best served on firm bread like melba toast, or crusty French breads, and so on. Also good on potatoes, and meats. Also good served straight up.

Tex's Mam's Scalloped Potatoes 🐷🍲
I've been eating these since I was a child in the 1960s and my sisters since the late 1940s.My mam and dad were married during WWII when food was rationed in Britain. Potatoes and onions weren't rationed, however meat was, but fortunately my dad made an arrangement with a local farmer to keep a few pigs at his farm. With the addition of a little water and some stock cubes, this little beauty is what Mam came up with. Hope you enjoy it as much as I do.

Tex-Mex Mac & Cheese
My family loves mac & cheese. One day I was making Tex-Mex Chicken and had made mac & cheese to go with it but wanted it to follow the Tex-Mex dinner theme I was going with so I found some Taco Bell Taco Sauce packets in the fridge and threw them in to the macaroni and it came out great. If you want to just change up your regular old mac & cheese, this will be the one for you.

Guyanese Chick Peas
This is a recipe that was made by a family member. Not having exact recipe, my step daughter Leela and I created our own. As close to possible to original. Now watch out, my family can handle SPICY. You can adjust spices to your taste but it won't be close to authentic. The curry powder shown with the addition of cumin and chili flakes was as close to using original recipe curry. Curry's are made a bit different from region to region so I learned.

Sweet Peas in Warm Milk 🫛🫙
This recipe is a really simple, cheap and easy, way to "cheat" making "creamed peas." 🤷♀️😄👌 It is also a great, semi- healthy "go-to" meal and/or snack. I mostly make it in the microwave, however, this can definitely be made on the stove. You also, could use fresh or frozen peas as well. I started doing this years ago, as a way to help my children go to sleep at night with the warm milk and also as a way to get them to eat more vegetables! 👏😎👍👍 This has saved me many times when I was low on groceries and needed a meal as well. It will also work fantastic as a side dish! #creamedpeas #cannedpeas #cannedvegetables #peasnmilk #peasandmilk #peas #peasinwarmmilk #warmmilkandpeas #CookEveryPart

Tex-Mex Shepherd's Pie
We had a craving for shepherd's pie, but also wanted to shake things up with it for some added pizzazz. This was the result. Although the recipe I'm sharing is including a few extra things that I will be doing next time, as I think they will improve it a little bit. We didn't do the thickening of the sauce, and only used 2 pkgs. of taco seasoning this go round, but still came out yummy, but gonna add a third pkg. to it next time and thicken the sauce a bit, as well as add more cheese and brown the top of the taters!!! 😆😆😆

Mint & feta peas
Mint is the perfect pairing for peas. This dish goes well with salmon. For a twist make this into a purée!
