Eggplant and Pork Stir-fry at a Ramen Shop Eggplant and Pork Stir-fry at a Ramen Shop
I used to go to a ramen shop, which was close to my work, and I used to eat this dish all the time when I was still single. I remembered that nostalgic taste, and tried to recreate it. I always enjoyed it, and I ordered nothing but this dish.Stir-frying over high heat is the key. I used a lot of oil to cook this dish to taste just like the ramen shop (adjust the amount of the oil to your liking.) Don't stir-fry too long. If you do, the vegetables will lose their nice colours. I only cooked 2 servings to keep the heat high in the wok. Enjoy the freshly cooked dish. Recipe by Taunbi- cookpad.japan -

This is an invention of necessity. I had dental work done leaving my jaw aching and mouth still slightly numb. I was getting hungry, but knew I'd need something soft so I went to our "Oh crap we forgot to buy groceries today" Ramen stash. I cooked mine a little longer tonight becsuse I needed it extra soft for my jaw.And yes, I use the store-bought "bad for you" Ramen from time to time. It's a lazy guilty pleasure. My daughter can't eat steaming hot food, so I thought this would be OK for her.I plan to try it out with different kinds of ramen. If you add the whole soup packet, it will be too salty. I used shio (salt-flavored) ramen. If you use 200 ml of water, the noodles will be very plump, and if you use 250 ml the finished dish will be soupy. Please adjust the amount of water to your liking.
