What best way to use some of the garden produce than a pickle for the sandwiches for the rest of the year. This time I used the last part of the mixture and put it through a hand held blender to make a spreadable version. Fingers crossed it will work out fine. After blending I returned for a minute to boil with some extra vinegar.

Ingredients

  1. 275 gramschantenay carrots
  2. 275 gramsswede or turnip
  3. 2medium onions
  4. 2medium dessert apples
  5. 1courgette/zucchini
  6. 100 gramsdates
  7. 60 gramsprunes
  8. 6garlic cloves crushed
  9. 250 gramslight brown sugar
  10. 500 mlmalt vinegar
  11. 4 tbsplemon juice
  12. 1 tbspworcestershire sauce
  13. 2 tspmustard seeds
  14. 2 tspground allspice
  15. 1 tspcayenne pepper
  16. 1 tspsalt
  17. 4cloves crushed
  18. 1 pinchground cloves

Cooking Instructions

180 mins
  1. 1

    Dice all the veg and fruit into small cubes about 0.5cm. Crush or finely chop garlic.

    Place all ingredients into a large pan and bring slowly to the boil

    Simmer until carrots and swede are soft. 1 1/2 to 2 hours

  4. 4

    You may need to add a bit of water if too dry

  5. 5

    Pot into clean sterilized jars. Cover and seal

  6. 6

    Label and date once cool

  7. 7

    It takes about one month to mature.

    The last batch I made I replaced courgette by three small cucumbers and instead of prunes I added about 175 grams dates chopped.
