I came down with a cold today and I fancied some spicy soup. it really helps to clear my sinuses out so I made this one on a whim. Turned out great!

Ingredients

40 mins
4 servings
  1. 300 gramsof button mushrooms (use any type you like, these were the only ones the local shop had), sliced
  2. 2 smallcarrots, sliced
  3. 6celery sticks, sliced
  4. 2 mediumripe tomatoes, finely chopped
  5. 1 tbspof tomato paste
  6. 1 tspof chilli oil
  7. 1 literof water
  8. 1chicken stock cube
  9. 1 pinchof salt
  10. 1quarter of a large chicken ( you can leave it whole if you intend to shred it or cut in bits if you want to leave bone in)
  11. 2 tbspof olive oil

Cooking Instructions

    place all the ingredients into a deep pan.

    bring to the boil on a medium to high heat for about 20-25 minutes. stirring occasionally.

  3. 3

    take the chicken piece out and let it cool enough to handle it and shred it from the bone. throwing away the chicken skin.

  4. 4

    add the chicken back to the soup and cook for a further 5-10 minutes. checking the seasoning and making sure its to your taste.

  5. 5

    stand for another 10 minutes and serve.
