Cinnamon Waffles

Weekend Breakfasts are a treat for my daughter. She dreams up interesting combinations, which sometimes turn out really great😀
In the absence of a waffle iron, the same mixture can be used to make drop scones..just heat a pan and oil it, drop a table spoon of the batter, several of them into the pan...once it bubbles and firms up, turn over.
Both can be a breakfast treat or a dessert, experiment with various toppings☺

Ingredients

  1. 2 cupsall purpose flour
  2. 4 teaspoonsBaking powder
  3. 2 teaspooncinnamon
  4. 1 teaspoonsalt
  5. 5table spoons sugar
  6. 100 gunsalted butter (room temperature, chopped)
  7. 1and 1/2 cup warm milk
  8. 2eggs
  9. 2 teaspoonsvanilla extract

Cooking Instructions

    Sift together flour, baking powder, salt and cinnamon. Whisk in the sugar.

    Put the butter into the warm milk, it should melt in effortlessly. If not warm the milk a bit.

    Be sure that the butter and milk mixture is cool before adding in the eggs and vanilla extract. Whisk to combine.

    Pour the wet ingredients into the dry ingredients bowl, combine well and leave to stand as you prepare the waffle pan.

    Heat the waffle pan and grease it. Pour a quarter cup of the batter into the middle section of the pan, allowing it to spread evenly.

    Close the waffle pan, this will help to spread batter out evenly.

    Cook each side for about a minute if using a cooker top waffle pan.

    Serve warm with your favourite toppings. For us it's always butter and honey
