Plantain cake to the rescue, that moment when you wanna have sweet pastry or cake-like snack without consuming white sugar/butter and/or much white flour. You can also have it in chocholate form.

Ingredients

  1. About 1 handful of flour
  2. 1medium size of well-ripe plantain
  3. 1 teaspoonbaking powder
  4. Browning (for the chocholate one)
  5. Nutmeg, Vanilla
  6. Skimmed milk (2 satchet of three crown smallest size)/liquid one
  7. 1Egg
  8. Dried fruits/rasin

Cooking Instructions

    I used the following ingredients:

    Dice your plantain into small cubes and pour inside blender, then break your egg and add it into the diced plaintain. If you are using powdered milk, dilute with very little water and also add. Then blend till its smooth.

    Next, add other ingredients except your dried fruits and blend again. (You can gradually add in your flour if you are mindful of your consumption of white flour till you are okay with the amount you have used or you have your desired thickness. If you like very sweet things, you can taste and see if you will need to add sugar but its really sweet even without sugar).

    After you are done with the final blending, pour the mixture into your greased baking pan. Then top it with the dried fruits and you can the proceed to bake. Remember to have preheat your oven.
