This is my modified version from Wheat Belly Cook Book
**Warning...this is not a replacement for stuffed cabbages! I think it needs more tomato flavor.
Cooking Instructions

In large pot, heat oil. Brown beef and onions until beef is no longer pink and onions are translucent.

Stir in tomatoes, salt and pepper. Add coleslaw and water and mix well. Reduce heat, cover and simmer 20 min. or until cabbage is done.

Remove from heat and stir in sour cream if using. Taste for seasoning and add salt and pepper if desired.

This was a new recipe for me. I had never even had stuffed cabbage so I just winged it. I thought it turned out very delicious... I ended up eating all of it in 2 days (by myself!) I'd say it would make approximately 3 servings if serving as is. 6 servings if served over rice.

Just a mixture cabbage and potatoes have been going together since Colcannon was first made. This is a good meal to end winter with. The flowers are blooming and birds singing so the 2 weeks of winter are over here in Florida.
