Tuwon shinkafa goes down well with any well made soup, hence my mixture of variety of interesting ingredients across boarders.

Cooking Instructions

Wash goat meat, put into pot, add in washed stock fish. Season and add a cup of water, set on fire and allow to cook till tender.

Prepare all ingredients

Pound dadawa, ginger, pepper and onions.

Back to meat on fire, add the ground pepper mix, crayfish, P.oil. Add in water and cover pot, allow to boil for 5mins.

Once boiled, add in green onions, shrimps and Ukazi. Allow to cook for 2mins.

Add in Okro, stir very well and leave to cook for 3mins. And Soup is ready.

For tuwo Set pot of a liter of water on fire and allow to boil very well. Wash Shinkafa tuwo(rice for tuwo)

Pour rice for tuwo into boiling water, stir a bit and allow to cook till tender. Once cooked, mix well to mould tuwo. Serve with soup and enjoy.

If you don't want to eat chicken feet, don't add chicken feet.Additionally, chicken blood is traditionally added when the stripped meat is added back to the pot. This is optional and we didn't add any in this recipe.Apparently this dish is very specific and if you don't add the krachai it's not technically ขนมจีนน้ำยา. I was told that there aren't alternatives to this ingredient.I was also told that you can't live without krachai, so I recommend that you take a trip to your local Thai grocery store frozen section.
