Ingredients

  1. Rice
  2. Fresh tomatoes (blended)
  3. Fresh pepper (blended)
  4. Onions (chopped)
  5. Green peas
  6. Carrot (diced)
  7. cubesSalt/seasoning
  8. Curry powder
  9. Thyme
  10. Jollof rice spice
  11. Vegetable oil
  12. Ginger and garlic (blended)
  13. Chicken stock (broth)
  14. Tinned tomatoes

Cooking Instructions

    Parboil rice and drain excess water using a drainer. Do not soak rice in water to avoid it becoming mesh.

    In a pot, add vegetable oil, pour blended tomatoes,pepper,garlic,ginger and fry until moisture evaporates, add tinned tomatoes,curry powder/thyme and stir, fry everything together. Add salt and seasoning to taste.

    In a separate pot, add the chicken broth, pour in the fried blended mixture. Add the spices as desired. Add some extra seasoning if necessary. Boil for some minutes, add parboiled rice and cook until soft

    When rice is cooked, add the carrot and green peas, cover and allow to steam and stir... Your Jollof rice is ready.
