Browsing through my saved recipes, I found Egg and Tofu Stew by Susi Agung, perfect timing...
We always have eggs at home for spontaneous baking... haha
Without wasting time, I made this budget-friendly stew that's so flavorful... sweet, savory, as I love soy sauce... added more soy sauce... haha

Ingredients

  1. 5 piecestofu, cut in half, fried
  2. 6eggs, boiled and peeled
  3. 3bay leaves
  4. 2 stalkslemongrass, bruised
  5. 2 tablespoonspalm sugar
  6. 3 cmgalangal, bruised
  7. SPICE PASTE:
  8. 7shallots
  9. 4 clovesgarlic
  10. 5candlenuts
  11. 1/2 teaspoonwhole peppercorns, to taste
  12. 1/4nutmeg
  13. 1/4 teaspooncoriander
  14. To taste: bouillon powder, soy sauce, salt

Cooking Instructions

    Prepare the ingredients.

    Sauté the lemongrass, galangal, and bay leaves along with the spice paste until fragrant.

    Add the eggs and tofu. Add sweet soy sauce, season with salt, palm sugar, bouillon powder, and sweet soy sauce, mix well, and pour in about 1.5 cups of water or to your preference... whether you want it soupy or thick :)

    Continue cooking until the water reduces, TASTE TEST. I didn't cook it for long, as I was in a hurry, haha. Hungry, I mean... hehe

    Serve with warm rice, sambal, and crackers, yum!!

    If you like it sweet, just add more palm sugar or soy sauce... if not, reduce it... the recipe is flexible :)
