Ingredients

  1. For idli-
  2. 1 cupsuji
  3. 1 cupcurd or as required
  4. to tasteSalt
  5. 1/2 tspbaking soda
  6. For stuffing-
  7. 1 tbspoil
  8. 1/2 tspcumin seeds
  9. 1finely chopped onion
  10. 2boiled and mashed potatoes
  11. 1/2finely chopped capsicum
  12. 1/4 cupcabbage shredded
  13. 1/4 cupfresh green peas
  14. 1/4 cupfinely chopped carrot
  15. 1green chilli finely chopped
  16. Handfulfresh coriander leaves
  17. Some spring onion leaves chopped
  18. to tasteSalt
  19. 1/4 tspturmeric powder
  20. 1/2 tspred chilli powder
  21. 1 tsplemon juice
  22. For batter -
  23. 2 cupgram flour
  24. 1/4 tspred chilli powder
  25. to tasteSalt
  26. Pinchbaking soda
  27. Some Fresh coriander chopped
  28. Oil for frying

Cooking Instructions

    First for making idli - in a bowl add suji,curd and salt.Mix well and keep aside to rest for 15 mins.

    Add baking soda...Mix nicely.Heat a idli steamer, grease each mould with little oil,pour batter into each mould and steam for 10 -12 mins.

    For stuffing-- heat a pan with oil,add cumin seeds,when they crackles add onion and stir for a min on medium flame.add all finely chopped vegetables and salt,cook covered for few minutes until soft.add potatoes, turmeric powder, red chilli powder,mix well,add fresh coriander and lemon juice mix and switch off the flame.stuffing is ready.Let it cool.

    Now in a bowl add gram flour, salt, red chilli powder, fresh coriander and pinch of baking soda.make a medium thick batter using required water.batter is ready.

    Now slice each idli from center with knife.(make two parts)

    Spread prepared vegetable stuffing on one part and cover with another part,press lightly.

    Make all idli sandwiches in same way.

    Heat oil in a wok, dip each idli sandwich in gram flour batter and fry until nice golden.

    Cut it into two halves and serve with coriander mint chutney or with tomato sauce.
