    Heat water once it starts boiling, reduce heat add vinegar, swirl water and break in eggs and drop. The swirling will help the poaching process. Do this for 6minutes. Take out and place in ice waterbath.

    For the umpa. Chop onions, and carrots and tomato. Heat pan, add oil when hot, add onions, then carrots and later on tomatoe. Season. Add little water. Shred the bread and pour into sauce. Mix so that bread coats well with sauce. Chop some lettuce and add mix then take off heat.

    For the plating. Make your little garden salad. Place poached egg ontop season with black pepper. Dish your Umpa. And ready to eat.
