Carrot muffin pancake 🥞

Cooking Instructions

Sift in all the dry ingredients in a bowl.

Mix in the milk egg yolk and melted butter and mix

Now make a well at the center of the flour and add the milk mixture and mix everything together

Add the shredded carrots and mix
- 5
Beat the egg whites till it’s frothy and gently fold it in to the batter. Do not over mix pls else you’ll end up with a deflated pancake

Grease your muffin pan with butter add scoop the batter half way given it a rough room to puff

Add the shredded carrot on top of the batter.

Bake at 150 degrees for ten minutes.

You can use any fruits if your choice from banana, strawberry, blueberries, nuts like almond nuts or cashew nuts, you can use chocolate chips or mix of both. Serve with fresh seasonal fruits, maple syrup, whipped cream or anything of your choice.
