Okpa (Bambara nut cake)

I always buy Okpa from roadside sellers, so I asked the Okpa seller to give me tips on how it's made, she told me and I decided to give it a try. It came out okay, but not as that of the Okpa seller 😀😀😀 Anyways, practice makes perfect! (Pardon my plating)

Cooking Instructions
- 1
Sift Okpa flour in a bowl, add palm oil to it and mix until you get a yellowish mixture, add luke-warm water, mix and dissolve the powder until a smooth paste is formed and there are no lumps. Your mixture shouldn't be too watery or too thick (just right).
- 2
Add some salt and seasoning cubes to taste, add chopped onions, blended scotch bonnet pepper and crayfish. Mix together. Scoop the paste mixture into banana leaves, nylons or foil paper. Here, I use white nylon. Tie and put in a pot of hot boiling water. Allow to cook until the Okpa is ready.
- 3
Allow to cook until the Okpa is ready. You can add more water to the pot if you notice that the water is drying up and the Okpa isn't ready.
- 4
Your Okpa is ready! Enjoy!

Blue Velvet Cake with Cream Cheese Frosting Blue Velvet Cake with Cream Cheese Frosting
My mother has always told me about how when she was a child my grandmother would ask her what kind of cake she wanted for her birthday. Because she loved the taste of red velvet cake, but her favorite for was blue, she would always ask for blue velvet cake every year.I stumbled across the recipe this one is based on when I was actually looking up a completely different recipe and, knowing she has not had blue velvet cake in years, I decided I'd give her a nice surprise for her birthday this year! This recipe is not 100% original to me, but my modification of what I found online. Filipino Food Series: Baguio’s Good Shepherds Ube Halaya Custard Cake (Purple Yam Custard Cake) Filipino Food Series: Baguio’s Good Shepherds Ube Halaya Custard Cake (Purple Yam Custard Cake)
Trivia: Ube halaya or halayang ube is a Philippine dessert made from boiled and mashed purple yam. Good Shepherds in Baguio, Northern Luzon part of the Philippines, makes the best Ube Halaya! You can use it for pastries and cake flavours. This is my first time to do frosting and rosette swirls :). some wants the custard on top of the cake, but in this recipe I want to make use of the Ube Halaya as frosting so I put the custard sandwiched between the cake 😊.used hand whiskers here. (Took me 30 minutes to come up with sturdy peaks 😜) #purpleyamcake #ubehalaya #filipinofoodseries #asiancuisine Ynielle’s Kitchen Diaries -

Bienenstich Cake with Homemade Vanilla Creme Bienenstich Cake with Homemade Vanilla Creme
Note: This recipe is a work-in-progress. I adapted from a German recipe, but the dough seems to come out too soft and sometime the custard might not get thick enough according to another person who cooked :( I'll update this sometime soon [3/29/2016]This is a German pastry loved by all ;) The name means "Bee Sting" in German. Most German recipes use instant pudding, but in this recipe I've included how to make your own vanilla custard creme filling (you can double it if you love the super cream-filled kind!). You'll probably need a couple hours to make this so plan ahead. Felice
