I always buy Okpa from roadside sellers, so I asked the Okpa seller to give me tips on how it's made, she told me and I decided to give it a try. It came out okay, but not as that of the Okpa seller 😀😀😀 Anyways, practice makes perfect! (Pardon my plating)

Ingredients

  1. Okpa flour (1 & ¹/² mudu)
  2. Palm oil (1 bottle)
  3. Scotch bonnet pepper (as desired)
  4. Onions (2 big bulbs)
  5. Seasoning cubes and salt (to taste)
  6. Crayfish (1 cup) grinded
  7. Luke-warm water

Cooking Instructions

    Sift Okpa flour in a bowl, add palm oil to it and mix until you get a yellowish mixture, add luke-warm water, mix and dissolve the powder until a smooth paste is formed and there are no lumps. Your mixture shouldn't be too watery or too thick (just right).

    Add some salt and seasoning cubes to taste, add chopped onions, blended scotch bonnet pepper and crayfish. Mix together. Scoop the paste mixture into banana leaves, nylons or foil paper. Here, I use white nylon. Tie and put in a pot of hot boiling water. Allow to cook until the Okpa is ready.

    Allow to cook until the Okpa is ready. You can add more water to the pot if you notice that the water is drying up and the Okpa isn't ready.

    Your Okpa is ready! Enjoy!
