Ingredients

4 servings
  1. 250 gdates
  2. 3 tbspvinegar
  3. 1/2 teaspoonsalt or to taste
  4. 1 tbspsugar
  5. 1 Sprigcurry leaves
  6. 3 tbspoil
  7. 1 tbspred chilli powder
  8. 1/4 teaspoonhing
  9. 4green chillies finely chopped
  10. 1/4 teaspoonturmeric
  11. 1 teaspoonmustard seeds
  12. 1 tbspginger paste
  13. 1 tbspgarlic paste

Cooking Instructions

    Deseed and roughly chop dates

    Heat oil in a pan. Splutter mustard seeds, curry leaves and hing

  3. 3

    Add ginger paste, garlic paste and green chillies. Saute until raw aroma disappears

  4. 4

    Add spice powders and saute for 2 minutes

  5. 5

    Add dates and cook until it softens

  6. 6

    Add salt and sugar. Mix well. Dates should be well coated with all spices and salt. Saute for 2 minutes

  7. 7

    Add vinegar and mix well. Saute until pickle/ mixture comes together. Switch off

  8. 8

    Allow to cool completely. Serve with papad and Biryani or Parottas

  9. 9

    Store in cool dry place in sterile airtight container for any leftover pickle
