Chakalaka by Ogechukwu Mbanugo

Chakalaka is one of the popular dishes enjoyed by most South Africans. I mean, what is there not to enjoy? The mere sight of the colorful vegetables will leave you salivating all day long and lets not forget that these vegetables are extremely good for your health. So it's a combination of indulging in good food and doing your health a great deal of favor.
My recipe is very easy to prepare as I have modified it so you can easily lay your hands on the ingredients.
Chakalaka can be served with any kind of pasta, rice, plain beans or yam and any meat of your choice preferably fried chicken fillets cut in big chunks.

Cooking Instructions

All ingredients needed

Shred carrots and bell peppers, dice onion,seasoning cubes, tomatoes

Heat up vegetable oil in a wok on medium heat
- 4
Sauté onions for one minute
- 5
Stir in minced garlic, sauté till fragrant for just one minute
- 6
Next, add curry powder and all the bell peppers, stir to combine for 2 minutes

Add shredded carrots, stir and combine, sauté for one minute
- 8
Stir in tomato paste, add thyme, fresh tomatoes leave to simmer for 6 minutes

Add baked beans, stir to combine. Then turn off the heat immediately

Chakalaka is ready

I love ratatouille. Adding bacon enriches the flavor, but if you chill it in the fridge, all the fat hardens and will be unpleasant to the palate. So I thought about adding a can of tuna. That's how I made this delicious ratatouille that will stay tasty even after it's chilled and also very rich in flavor. I think it goes well with any summer vegetables and mushrooms except for leafy greens.You simmer the vegetables with only the oil from the canned tuna and the water from the vegetables. The tomato sauce is hearty and tasty (I had a hard time not eating it all up before the veggies were ready!). I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. .
