  1. 1 head romaine lettuce, cut into bite-size pieces
  2. 3/4 cupcroutons
  3. 1/4 cupparmesan cheese, grated
  4. Dressing:
  5. 4 tablespoonsolive oil
  6. 3 tablespoonslemon juice
  7. 2 tablespoonsred vinegar
  8. 1 teaspoondijon mustard
  9. 1 teaspoonWorcestershire sauce
  10. 1 clovegarlic, crushed
  11. 3 flat anchovies, minced (optional)

    In a bowl, mix the lemon juice, vinegar, mustard, Worcestershire sauce, garlic, anchovies if using, salt and pepper until well-combined.

    Slowly add in the olive oil in a steady flow while constantly whisking until the dressing is smooth.

  3. 3

    In a salad bowl, add in the lettuce and half the dressing and toss. Then add the remaining dressing along with the parmesan cheese, and croutons and toss again.
