My favourite kind of stew anytime of the day. The aroma of this stew when you go to restaurants especially the Yoruba restaurants is amazing and because I like the stew so much I decided to learn how to make it from them and made mine at home. It can be enjoyed with rice,beans or paired with ewedu for amala. The stew is simply phenomenal please you can adjust the pepper to suit your taste buds me prefer it spicy. Let's cook

Cooking Instructions

Blend the tomatoes,onions and pepper pour in a pot and boil till the water is almost dried up. pour into a bowl and set aside.

In the same pot heat some vegetable oil when its hot, fry the meat set aside.

Add in your ginger and garlic paste into the oil, sautee for 2minutes. Pour the tomato paste into the oil and Start frying it by stirring it at interval so it doesn't get burnt. Fry for about 20min until all the water is dried up.

Pour in the meat stock into the fried tomato, at this point you would begin to perceive the buka aroma. Add in the meat, seasoning cubes, salt and spices add water if the consistency is too thick allow to boil for another 10minutes check for salt, correct if necessary. Your buka stew is ready.

I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. I had pork filet that I bought on sale, so I made this. Usually I make 'filet cutlets,' but it's delicious simmered as I did this time. I'm thinking of using it in a curry flavored stew next time.Coat the filets with flour and pan fry until crispy and golden brown. Use the fat that comes out of the meat to cook it.
