After our trip to Ireland I longed to make a Guinness stew that was similar to what we had there. This stew has a wonderful beefy flavor and it fantastic anytime of the year. Guinness bread is a wonderful compliment to this dish as well.

Ingredients

  1. 3 lbLean beef or lamb stew meat
  2. 3 tbspVegetable oil
  3. 3 tbspFlour
  4. 3 largeOnions, chopped
  5. 6Large carrotts, chopped
  6. 2 tbspgarlic
  7. 2Bottles of extra stout guinness bear
  8. 7 cupBeef stock, unsalted if available
  9. 3 tbspMolasses
  10. 1 tspworcestershire sauce
  11. 2Bay leaves
  12. 2 tbspFresh thyme, chopped fine
  13. 1Large container of fresh mushrooms or 2 small containers
  14. 1Instant mashed potatoes or homemade mash
  15. Salt and pepper

  1. 1

    Working in 3 separate batches, coat the stew meat with flour, salt and pepper. Add 1tbls of oil to a very large dutch oven and brown beef on all sides. Remove beef from pot.

    Add 1/2 tbls to pot after u have cooked all the beef and add onions, carrots and garlic. Cook on med heat for approximately 8 minutes or until the onions are looking translucent. Remove mixture from pot.

  3. 3

    Add 1 bottle of Guinness, de-glazing the bottom of the pan and scraping up all that yummy goodness.

  4. 4

    Add seared beef, onion and carrot mixture back to the pot. Pour in the last Guinness and beef broth.

  5. 5

    Add mushrooms, molasses, Worcestershire sauce, bay leaves and thyme. Bring to a boil then reduce heat to a simmer, cover and cook on low for 4 hours or until beef is fork tender.

  6. 6

    Add a scoop of instant mashed potatoes or your own mashed potatoes to a bowl, cover with Guinness stew and enjoy. The potatoes are not necessary but do add a wonderful creamy texture. Enjoy!
